The Miyabi Kaizen II 5000FCD 7″ Santoku Knife combines traditional Japanese craftsmanship with cutting-edge steel technology. Handcrafted in Seki, Japan, it features a precision-forged FC61 fine carbide steel core encased in 48 layers of Damascus steel with an elegant flower pattern. Enhanced with Friodur® double ice-hardening, the blade offers exceptional edge retention, durability, and resistance to corrosion.

Expertly hand-sharpened using the three-step Honbazuke process, the blade achieves a razor-sharp 9–12° edge per side. Its thin, flat-profile blade effortlessly slices meats, seafood, and vegetables. The D-shaped black pakkawood handle, accented with a decorative steel mosaic pin and end cap, ensures superior balance, comfort, and control.
